In 2015, the value of sausage production in the U.S. amounted to $5.4B, descending by -14.2% against the previous year level. Overall, the U.S. sausage output pursued a measured decline from 2007 to 2015. The total output figures decreased at an average annual rate of -1.7%. The trend pattern, however, indicated some noticable fluctuations throughout the analyzed period. The growth pace was the most rapid in 2011, when the output figure increased by +20% from the previous year level. In that year, the value of shipments of sausage in the United States attained its maximum level of $6.4B. From 2012 to 2015, the sausage production yet failed to recover to its maximum levels.

Animal and marine feed and fertilizer by-products (including foots) was the major product category in the U.S. sausage manufacturing, with a share in total output standing near 68% in 2015. Lard, inedible tallow, and other greases, excluding wool grease lagged far behing, accounting for only the 30% share. The other related products together comprised a fairly negligible share in the total output of the total output.
