Ekkehard Knobelspies launches The Beef Advocate - The Global Meat Standard

A new international benchmark calling for greater provenance, transparency and accountability in the global meat and steak restaurant industry.

With The Beef Advocate - The Global Meat Standard, entrepreneur and industry figure Ekkehard Knobelspies launches a new international certification designed to recognise restaurants, butchers and meat programmes that demonstrate serious commitment to provenance, traceability, sourcing integrity and professional standards in handling, maturation and communication.

Knobelspies is also the Founder & CEO of the World's 101 Best Steak Restaurants, the world's leading ranking dedicated to exceptional steak restaurants across the globe. With The Beef Advocate, he is now taking the next step: creating a global standard intended not only to recognise excellence, but to encourage a necessary shift in thinking across the international meat and steak restaurant world.

At the centre of this initiative stands a conviction that has become increasingly urgent: provenance must move from marketing language to meaningful practice. In an industry where terms such as quality, premium and craftsmanship are used with growing frequency, the need for greater clarity, verification and substance has never been more important. For Knobelspies, the future of serious meat culture cannot be built on image alone. It must be built on systems, standards and the willingness to make origin, sourcing and handling visible and accountable.

The Beef Advocate - The Global Meat Standard has therefore been developed as a practical and credible international framework for those who understand that true quality begins long before the plate. It examines not only what is being served, but the integrity of the programme behind it. The certification assesses sourcing transparency, breed and origin declaration, supplier relationships, traceability, maturation, in-house handling, storage discipline, butchery procedures, documentation and the way provenance is ultimately communicated to the guest.

Ekkehard Knobelspies, Founder of The Beef Advocate - The Global Meat Standard, says:
"The global steak and meat restaurant industry has reached a point where a new level of seriousness is required. Provenance cannot remain a decorative word on a menu or a convenient narrative in marketing. It must become part of a verifiable and credible system. With The Beef Advocate, we want to support and recognise those who understand that great meat is not defined by luxury alone, but by truth, transparency, responsibility and respect."

"The industry does not need more storytelling without substance. It needs a new mindset - one in which provenance, transparency and accountability are understood as essential, not optional."

The new standard is designed for an international industry that is becoming more visible, more ambitious and more scrutinised. Guests today are increasingly aware of where food comes from, how animals are raised, how products are matured and whether the claims made by restaurants are genuinely supported by substance. At the same time, the premium meat sector continues to grow in global relevance, making it all the more important that standards evolve alongside ambition.

For that reason, The Beef Advocate is not limited to one country, one breed or one style of operation. It is an international framework capable of recognising regional differences while upholding a common global expectation: that claims around meat quality should be supported by discipline, structure and credibility. Whether a programme is built around grass-fed cattle, Wagyu, heritage breeds, dairy beef or highly specialised local sourcing, the decisive question remains the same - how serious, transparent and professionally managed is the system behind it?

The launch of The Beef Advocate - The Global Meat Standard reflects a broader mission to contribute to a cultural shift within the industry. Knobelspies has long argued that the global steak restaurant world must evolve beyond superficial luxury and place greater value on provenance, agricultural integrity, traceability and responsibility. In this view, the future belongs not to those who merely sell exclusivity, but to those who can clearly explain and substantiate what they serve.

This is where The Beef Advocate seeks to create impact. It is intended as both recognition and signal: recognition for operators who already uphold meaningful standards, and a signal to the wider industry that a higher level of accountability is no longer optional. The aim is not gatekeeping for its own sake, but progress - progress towards a more informed, more honest and more respected meat culture internationally.

With its combination of rigorous assessment and strong guest-facing relevance, The Beef Advocate - The Global Meat Standard is positioned to become an important point of reference for restaurants seeking to demonstrate credibility in an increasingly demanding market. For guests, media and industry professionals alike, it offers a clearer framework for identifying those who treat meat not as a generic premium product, but as a category that requires knowledge, evidence, discipline and respect.

As the first certified restaurants begin to emerge, The Beef Advocate - The Global Meat Standard aims to help drive an international shift in perspective - one in which provenance is not treated as a slogan, but as a responsibility, and where quality is judged not only by flavour and presentation, but by transparency, trust and the integrity of the entire programme behind the plate.
