Missgyoza - Handcrafted Innovation, Locally Made in Zurich

After four years of crafting bespoke gyoza for Japanese restaurants across Zurich through Vegyoza, founders Luigi Sebben and Ming Wu are taking their passion to the next level. In 2025, they officially open Missgyoza - the first facility in Zurich fully dedicated to gyoza recipe development and B2B production.

Nestled in Rüschlikon, Zürich at Loostrasse 11, Missgyoza is more than just a production kitchen - it's a creative space where culinary craftsmanship meets sustainability. Every gyoza we make begins with a simple philosophy: good food starts from good ingredients.

With his Italian heritage, Luigi brings an artisan's precision and a deep respect for dough - the texture, balance, and craftsmanship that define Italy's culinary tradition. Ming, born in Taiwan, draws inspiration from the rich flavors and techniques of Chinese, Japanese, Korean, and Southeast Asian cuisines. Together, they fuse these worlds into a new expression of gyoza - where East meets West, and tradition meets innovation.

We work closely with local producers to source fresh, sustainable ingredients, developing our own recipes from scratch without the use of artificial flavorings or preservatives. Even our gyoza wrappers are crafted from Swiss-milled flour, starting from the most natural base to create authentic texture and pure, delicate flavor.

Using natural spices and exclusive in-house blends, our gyoza capture genuine taste while staying true to our commitment to clean, honest food.

To preserve freshness and quality, every Missgyoza creation is flash-frozen, locking in natural taste and texture without additives. This allows us to deliver premium handmade gyoza to restaurants and partners while keeping our carbon footprint low and our production local.
