Never again – a steak tasting like the sole of a shoe on board an airplane

Despite thorough composition and preparation by the catering businesses, the air passenger receives a tepid or an overcooked meal. Often the kitchen devices, which mostly still are from the 70s of the last century, are to be blamed. In these kitchen devices, the stressed crew has to heat up the meals just relying on their own feeling about cooking time and temperature. That’s where the revolutionary technique of MGS Modular Galley Systems comes into play. The Induction Heating Unit IHU is a totally novel stove. It combines induction heat and steam to heat or cook the meals in a fast, gentle, and even way.

What is really clever about this system is that it works like steam cooking devices in big restaurants. A computer controls the heating process depending on the kind of meal in the oven. When the food is done it automatically cuts off and keeps the meal warm. With the help of this new oven, meals can be prepared freshly and served immediately. The induction heat – similar to a gas stove – gives fast and direct heat to the plates from below. From above the food gets cooked by the steam at the same time. Due to this, the meals are done within 6 to 10 minutes. Even if there are different meals in the oven; taste, colour, vitamins, and moisture stay excellent. The Induction Heating Unit IHU equals the dimensions of the ovens which are used at the moment so that the IHU can be installed on board an aircraft without any problems.

With the MGS induction oven it is possible for the first time to actually cook, not only reheat. No matter if it is steak or fish, Nasi Goreng or Paella, scrambled or fried egg – that’s how a meal on board really tastes good.

Employing cooks on board of an aircraft is now, for the first time, actually reasonable and is considered a good idea among several airlines. Leading the way are airlines from the Golf region and south-east Asia, but also from China.
