One of those vendors is BayouNOLA which specializes in New Orleans Creole cuisine. Executive Chef Nathaniel Landry who was born and raised in New Orleans, now resides in Loudoun County. Chef Nathaniel was personally trained by his grandfather, Chef Walter Landry, formerly of Arnaud's Restaurant in the New Orleans French Quarter.
"BayouNOLA is a tribute to my Grandpa and family. The first recipe my Grandpa taught me was his Creole Seafood Gumbo which is the first item on our menu" explains Chef Nathaniel. "I remember it like it was yesterday. I'd just completed college at Xavier University and was about to leave home to attend graduate school in Boston. After reading my acceptance letter to BU, Grandpa asked me "grandson do you want to continue eating the food you have been eating your entire life?" I replied "of course Grandpa." He said "well you are going to have to learn how to cook it yourself because no woman outside of New Orleans is going to know how to cook it."
Needless to say Chef Nathaniel took what his grandfather said to heart and for the next 3 months, he learned everything he could about Creole cooking. For the BayouNOLA menu, Chef Nathaniel has selected the most popular dishes families eat in New Orleans.
