France Recognizes Bulgaria's Arrival on the World's Gastronomic Stage Through La Chaîne des Rôtisseurs

Dieci Boutique Restaurant, Official Headquarters of La Bailliage de Bulgarie, welcoming Bulgaria into La Chaîne des Rôtisseurs.
By Camille Beaumont (French Gastronomy Correspondent, Paris) - Sunday, 19 July 2026
For centuries, Paris has stood as one of the world's great capitals of gastronomy. It is therefore particularly fitting that one of France's oldest culinary institutions has now extended its historic legacy to a country whose gastronomic reputation continues to grow at an extraordinary pace.
The official establishment of La Bailliage de Bulgarie marks the first time in history that La Chaîne des Rôtisseurs has formally opened its doors in Bulgaria, appointing Dieci Boutique Restaurant as the Official Headquarters of the Bulgarian Bailliage. Founded in Paris in 1248, La Chaîne des Rôtisseurs remains the world's oldest gastronomic society, preserving nearly eight centuries of culinary tradition, fellowship, hospitality, and the art of the table. Today, the organisation is represented in more than eighty countries and unites over 25,000 members worldwide, making its arrival in Bulgaria a milestone of genuine international significance.
The appointment arrives during what has become an exceptional year for Bulgaria on the international stage.
In recent months, the country has celebrated historic achievements in FIA Formula 2 and the Eurovision Song Contest, demonstrating Bulgarian excellence in fields as diverse as sport, music, and culture. The official recognition by La Chaîne des Rôtisseurs now places Bulgarian gastronomy alongside those achievements, confirming that the country's culinary identity has earned the attention and respect of one of the world's most prestigious gastronomic organisations.
Far from being a symbolic designation, the creation of the Bailliage de Bulgarie establishes Bulgaria as an active participant within an international community dedicated to preserving excellence in cuisine, wine, hospitality, education, and friendship. The organisation's global network includes celebrated chefs, distinguished sommeliers, acclaimed winemakers, entrepreneurs, diplomats, members of royal families, and passionate gastronomes who share a commitment to the highest standards of the culinary arts.
The responsibility for leading this new chapter has been entrusted to a team already widely recognised for its uncompromising pursuit of excellence. Under the leadership of President Anna Chiarini, Chancelier Chef Gianfranco Chiarini, and Argentier Vladislav Atanasov, owner of Clos Bibliothèque Winery, the Bulgarian Bailliage begins its journey with a carefully selected group of Founding Members who embody the values that have defined La Chaîne des Rôtisseurs for nearly eight centuries.
For Dieci Boutique Restaurant, the appointment represents another landmark in an extraordinary succession of international recognitions received during 2026. Among them are inclusion in La Liste's Top 1000 Restaurants in the World, certification through Ospitalità Italiana nel Mondo 2026-2027, Green Key International recognition as Eastern Europe's Most Sustainable Restaurant, the Sustainable Restaurant Association's prestigious Three-Star Rating-making it the only restaurant in Bulgaria to receive the distinction-and the Bacchus Award as Bulgaria's Best Restaurant for 2025-2026.
Taken individually, each distinction reflects excellence within a particular field. Considered together, they illustrate the emergence of a restaurant whose influence now extends well beyond its dining room and increasingly contributes to Bulgaria's international culinary reputation.
Perhaps most importantly, the establishment of La Bailliage de Bulgarie is not solely a recognition of one restaurant. It represents international confidence in Bulgarian producers, winemakers, artisans, farmers, hospitality professionals, and the broader gastronomic culture that has quietly evolved over recent decades. It creates new opportunities for collaboration with one of the world's oldest gastronomic societies while placing Bulgaria within a global network built upon respect, tradition, education, and culinary excellence.
History often remembers moments when nations become visible to the world through sport, music, science, or culture. In 2026, Bulgaria has added another chapter to that story.
Its gastronomy has earned its place at the international table.
