The brand name itself is a statement. A very Mexican expression, "cabrón" carries weight and dash of swagger. PRODUCTION AND CRAFT
Casa Cabrón Destilería sources many varieties of agave; there are nine states in Mexico officially authorized to produce mezcal under the Denomination of Origin (DO) agave. Each region contributes distinct terroir characteristics to the portfolio.
Casa Cabrón Destilería is run by their mezcalero who seeks and harvests only choice, fully mature agaves - some of which are wild, rare, and up to 30 years old. This important step is sometimes skipped in favor of less expensive agaves. Other modern harvesting techniques involve extra trimming and washing before roasting. The agave "piñas" are fire-roasted in an earthen, conical pit using hot volcanic rocks and pine logs. After the agaves piñas are roasted for about a week, they are then crushed using a shredding machine (no animals are used for crushing) and fermented in 1,000-liter open wooden barrels (tinas) before being double-distilled through copper pot stills. The traditional steps in the process have been practiced for over four hundred years.

As a certified agricultural engineer, the Casa Cabrón mezcalero seeks sustainability and accountability in agave farming practices and gives back to local communities through education and hands-on assistance at their distilleries.

MEXICANO
(Agave Rhodacantha)

ESPADIN ANEJO
