Wheat-Free Carrot Cake Made from Chia Seed Flour, Tasty and Nutritious

Orlando, Fl - September 12, 2011 - Nuchia Foods Corporation released a new wheat-free carrot cake recipe. It is amazingly wholesome and has a taste that is a match for any made with wheat flour. It is made using a cup for cup replacement of wheat flour with wheat-free Nuchia Original Chia Seed Flour. This (flour) is not just ground up chia seeds its' real flour and only offered by Nuchia Foods.

This may be one of our best wheat free cakes ever. It is an adaptation from a recipe my wife got from a friend 15 years ago. We updated this by adding my favorite flavor, vanilla and water to increase moisture. And of course we replaced wheat flour cup for cup with our Nuchia Original Chia Seed Flour. The first time we baked this I had my 13 year old granddaughter try a slice. I will let you know now, she asked for a second slice. Wheat-Free Carrot Cake Recipe

Ingredients
1 ¾ Cup Sugar (sifted)
1 ½ Cup liquid vegetable oil
4 Eggs
¼ Cup water
1 Teaspoon vanilla
2 Cup Nuchia Original Chia Seed Flour (measured after sifting)
1 ½ Teaspoon sea salt
2 Teaspoon baking soda
2 ½ Teaspoon Cinnamon
1 ½ Cup walnuts (chopped into pieces)
3 Cups grated carrots (some fine and course for character)

Icing

2 Cup Confection 10X sugar (more if desired)
6 Oz Greek Yogurt plain (to desired constancy)
2 Tablespoon butter softened

Cake Directions

Preheat oven to 300 degrees, and prepare three, 9 inch cake pans lined with wax or parchment paper. Lightly oil and dust with flour.
Combine sugar, oil, vanilla and eggs and mix on medium speed for 2 minutes. Sift flour 3 times (discarding course flour each time) then add other dry ingredients. Add dry mix to egg mixture and mix well. Add carrots, nuts and water, mixing lightly. Pour equally into the 3 cake pans (about 15 oz of mix to each pan). Bake at 300 degrees for about 45 minutes or until tester comes out clean.

Let cool in pans. When cooled remove from pans one at a time. Place 1st layer face down and cover with icing, place 2nd layer on top face down and cover with icing. Place 3rd layer face up and cover top and sides of cake with icing. Garnish with remaining nuts and thin pieces of carrots as desired.

Icing Directions: Mix all ingredients together in mixer and mix on low speed until creamy. Spread between layers, top and sides.
