Thomasina’s Restaurant has rediscovered the art of cooking with charcoal through their Original Charcoal Grill. Using charcoal, which gives off a heat that is untainted, allows food to retain its fresh natural flavour. Charcoal cooking is still being used in different parts of the world today.

Thomasina’s Restaurant uses mallee tree roots sourced from South Australian bush lands. The roots are then placed in earthen kilns and baked into a more combustible form of charcoal. Mallee roots are known for their fierce burning and intense heat that imparts a sweet smell. As a result, food from Thomasina’s Mallee Grill gives a flavourful and distinctive taste.
