I rarely use the word transformative for a restaurant, yet my evening at Dieci Boutique Restaurant in Devino, Bulgaria kept inviting the word. There is no drama here, no theatrical performance. Everything is deliberate, calm, and precise-almost meditative.

The road into Devino, Bulgaria narrows into orchards and forest until the stone house appears, resting quietly against the hillside. Inside, only ten seats. No clutter, no noise, no pretense. Just understated elegance and an atmosphere shaped by intention.

Dieci's commitment to sustainability is not an accessory but a foundation. The restaurant is fully off-grid, drawing power and water from its own systems. Its strict zero-waste rule-"nothing leaves the property"-is a functional reality. Organic matter becomes soil again; materials are reused or repurposed. This philosophy has earned Dieci the Green Key International Award, granted only after rigorous environmental scrutiny, and Three Stars from the Sustainable Restaurant Association (SRA) in London, its highest and hardest-to-achieve rating. These recognitions place Dieci as the most sustainable restaurant in Eastern Europe.

The cuisine matches the same level of depth and discipline. Many ingredients come from the forests and farms around Devino, Bulgaria-wild herbs, orchard fruit, autumn vegetables, and mushrooms still scented with the soil. The cooking is elegant and restrained, relying on clarity of flavor rather than ornate flourishes. It carries the confidence of someone who knows exactly what they want to say on a plate.

One dish captured this philosophy perfectly: Magma, the final savory course. Served in a transparent vessel, it transitions the palate from savory into sweetness. At the base lies a warm cream of gently melted kashkaval from Elena, touched with vanilla and Dieci's own honey. Above it, caramelized onions from the farm provide soft depth. A crisp layer of dehydrated kozunak adds texture and nostalgic sweetness. And on top, a savory byalo sirene ice cream scented with nutmeg-cold meeting warm, sweetness meeting salt, the first true step toward dessert. It's one of the most intelligent bridges between courses I've encountered.

Desserts feel liberated by that prelude-creative, expressive, and beautifully balanced.

Service from Anna and Gianfranco Chiarini completes the evening. Their movements are quiet, intuitive, and grounded in genuine care. Wines, especially from Clos Biblioteque, echo the precision of the cuisine.

In Devino, Bulgaria, Dieci offers something rare: sustainability practiced with honesty, technique at star-level finesse, and a sense of place that feels entirely its own.
