Hamburg, January 2025 It represents a culinary world that takes the current trend of fusion cuisine to a whole new level: Indochine cuisine creates the perfect symbiosis of East Asian tradition and French sophistication. Originating from the colonial history of the 19th and 20th centuries in Vietnam, Laos and Cambodia, you will not only find simple historical and cultural influences here, but also creativity and adaptation to local conditions. The result is a palette of flavors that is second to none.When the first French colonial rulers came to Southeast Asia in the 19th century, they didn't want to know too much about the local cuisine. They not only brought their own cooking techniques with them, but also foreign ingredients and special preferences. The local population adapted to this, but also did not want to give up their own culinary heritage. Added to this was the region's very special climate, so it is not surprising that Indochine cuisine literally embodies the bridge between East and West. It is a symbol of creative adaptation from two worlds that could hardly be more different.
An excellent example of this fusion is the famous Vietnamese "Bánh mì", a baguette with a filling of paté, pickled vegetables and fresh herbs. Built on a French base, it is Asian ingredients such as coriander and soy sauce that give the báhn mì its unmistakable taste. Diners experience a similar effect with the ever-popular "Phở" soup. Here, everything comes from the broth of the French pot-au-feu, which creates unexpected explosions of flavor with Asian spices such as star anise and cinnamon.
Even desserts can be transformed by this modern fusion cuisine. In Vietnam, for example, there is the caramel pudding "Bánh Flan", which is given an unmistakable character with the help of sweetened condensed milk. Condensed milk, once a common substitute for fresh milk for practical reasons, also plays a key role in coffee: the famous Vietnamese "Cà phê sữa đá" is an iced coffee with sweetened condensed milk and showcases the Vietnamese tradition of condensed milk as well as the French preference for strong coffee.
Architectural traditions of the Indochine
Traces of the fusion of East and West are not only to be found in the kitchen. A timeless style in itself, Indochine architecture is beginning to tell stories. Here, East and West meet in an inimitable way. The colonial era brought a mixture of materials, architectural elements and construction methods that only exist there. European elements such as round arches, stained glass windows and tiled floors are executed in Asian materials such as bamboo, wood and terracotta, giving them their very own character.
The diverse influences of Eastern culture and Western influences can also be found in the interiors. Large windows, high ceilings and open floor plans create a room climate that remains pleasant even in tropical heat thanks to the air circulation. Traditional ornaments such as lotus blossoms, cloud motifs and handmade wood carvings add an original flair.
