Fresh pasta is an uncooked, unpackaged, and unprocessed food product created by combining dough with eggs or egg replacements. It can be eaten raw or cooked in boiling water in a pressure cooker or on the stovetop. Pasta may also contain additional components such as flour, salt, olive oil, milk, butter, and so on. The flavour changes according on the meal; for example, in Italian cuisine, tomato sauce is used, whereas in Chinese cuisine, flavours are added to soy sauce.

Pasta is an unleavened dough product consisting of durum wheat semolina and water that was developed in Italy and is considered Italian cuisine. The two primary categories of pasta processed and consumed in varied sizes and forms are dried pasta and fresh pasta. Fresh pasta with greater palatability and nutritional value has evolved as a result of innovation in commercial manufacture. Fresh pasta is made from all-purpose flour, "00" low-gluten flour, eggs, and water using large-scale machines or by hand in the traditional way. They are pasteurised and stored at a temperature below 4°C rather than being dried like dry pasta. Fresh pasta comes in a variety of sizes and shapes, including long pasta, short pasta, filled pasta, tubes, ribbons, and flat pasta.
