It's been eagerly anticipated and at last the wait is nearly over; Time to look out the decanter and fill it with somthing special.The Kilchoman Spring Release for 2011 is finally available and rumour has it that it might be the only one this year.

The 2011 is a mix of 3 year old and 4 year old single malts each matured in first fill bourbon whiskey casks but the 4 year old has also had a short spell in oloroso sherry casks too. Being Islay's newest distillery there is still a scarcity of whisky available from Kilchoman so each new release is welcomed. Kilchoman, being a farm distillery, actually grows much of its own barley too adding to that unique Islay taste.
Kilchoman, (pronounced kilhoman) established in 2005, is a farm distillery and the first to be built on Islay for 124 years. Kilchoman gives everyone the opportunity to see all that is best in the grass-roots traditions of malt whisky distilling – from barley to bottle.

These guys at Kilchoman are the latest in a long line of Islay whisky distillers, and if the success of their fellow distillers across the island is anything to go by, this pluckly little blended malt will soon be making waves in the whisky world!

Kilchoman is one of the smallest distilleries in Scotland with an annual production of 100,000 litres of alcohol.
It is one of only six distilleries to carry out traditional floor maltings, but the key difference at Kilchoman is that the barley is grown on the farm at the distillery, whereas other distilleries purchase barley from around the country.
100 tonnes of malting barley is grown and malted at the
distillery. This represents 30% of their annual production. The balance of malt is purchased from the Port Ellen Maltings on the island.
The two malts are kept separate through the production process and when
mature they release two expressions of Kilchoman Single Malt.
80% of their annual production is filled into a combination of fresh bourbon barrels from Buffalo Trace Distillery, Kentucky and refill casks and 20% into fresh oloroso sherry butts.
