Le Cordon Bleu Alumni, Jean-marc Breney, Joins Siam City Hotel

BANGKOK, Thailand (December 28, 2010) – Those of you who like pastries will rejoice that the Siam City Hotel, Bangkok (part of Siam Hotels & Resorts), has newly welcomed the arrival of pastry chef extraordinaire, Jean-marc Breney. He is now cooking up a daily dose of delectable treats for the hotel's numerous dining outlets – Patummat, Bakery Café, City Lounge and Primavera – along with supplying personalised goodies for in-house weddings, banquets, parties and functions.

Born in France, Breney’s passion for manipulating sugar into stunning creations has been with him since he was young. Breney began his formal culinary training by gaining a Professional Aptitude Certificate (CAP) and Brevet d'Etudes du Premier Cycle (BEPC) as a pâtissier (pastry chef). He then went on to gain a Formation Center Apprenticeship (CFA) from L’Ecole Jean Ferrandi, widely regarded as one of the leading pastry schools in France. Here he developed a strong foundation in classical techniques, which nowadays serve as the anchor for his creative pursuits.

Upon graduation, Chef Breney embarked on an acclaimed local and international career, honing his expertise at numerous Michelin star establishments, such as the L’Estournel, Taillevent and Le Doyen, before going to work for the Sofitel group in France, Cambodia, Vietnam, Thailand and Bahrain. In the ‘90s he even stepped into the classroom at Le Cordon Bleu in Paris, teaching students the finer points of making French pastries.

Luckily for us, Breney is now calling Bangkok home and tantalising guests, locals and staff alike with his divine creations. Whether it's an éclair, croissant, chocolate mousse, macaron, petit fours, lemon meringue pie or elaborate croquembouche, his culinary masterpieces never fail to look good and taste even better! As Breney is fond of saying: "My goal is to always use the best techniques and produce to create desirable and on-trend desserts.
