Bullfish Brings Big-City Dining Experience to Long Island

SAYVILLE, NY — Long Islanders who wish to have that big-city dining experience without traveling into Manhattan or paying the big-city prices can visit Bullfish, a restaurant located on the South Shore of Long Island that provides delicious and healthy menu items.

Carlo Bruno, the restaurant’s Owner/Operator, has 15 years experience in the restaurant business as a consultant and general manager. He worked at numerous restaurants in New York City, including Josephina, Coastal, Metronome, Tre Amici and Mustang Grill.

“When a person is asked, ‘Why did you open a restaurant?’, most would say it’s because they have a passion for food or it was a lifelong dream to have a restaurant of their own,” Mr. Bruno said. “I suppose I would say the same. What might make me a little different is that I have developed a concept that will please those who will appreciate quality, fresh and healthy food, prepared to satisfy and awaken all of your senses, served graciously and consciously in an atmosphere that will welcome and warm your soul.”

Growing up off the waters of Long Island, Mr. Bruno wanted to bring the big-city experience back home. The Sayville location proved to be the ideal spot for Bullfish, providing an alternative to the chain restaurants and other fine dining establishments. “Sayville has other good options for fine dining, but we felt there was a gap to fill,” he said.

He says the restaurant’s clientele should be one who appreciates good food. “We want to attract those who understand what good food is — food which is not over the top, but just right for any palette,” he said. “So we expect our clients to come from all walks of life. We have only one requirement: relax and have fun.”

Bullfish offers a wide array of seafood dishes such as sautéed hazelnut encrusted catfish, cedar planked and smoked bluefish, crab quesadillas, seared Ahi tuna, seared scallops and lobster egg roll.

In addition to seafood, Bullfish offers steak, veal, chicken and ribs. The menu also features a unique line of soups and salads and seafood pasta dishes, all of which can be substituted with chicken. For dessert, Bullfish offers such delicacies as the flourless chocolate tort, sorbet, strudel, bread pudding and crème brulée.

There is also a children’s menu that parents may be glad to know offers healthy choices. Such child-friendly meals include popcorn calamari, vegetables and dip, chicken quesadilla, fish and chips, penne with chicken and marinara sauce and the surprise favorite Bullfish Chowder.

Mr. Bruno emphasizes that everything is made in house—including soups, sauces, compound butters and salad dressings — using the freshest ingredients and each entrée is accompanied by the Chef’s selection of healthy whole grains. Most products come from local distributors; nothing is frozen or manufactured.

“In a world of fast food and less-than-choice quality, where we experience so much illness and obesity, I felt I had a responsibility not to contribute to it,” Mr. Bruno said. “Instead, I strive to offer healthy and fresh high-quality fish and meat choices with rich whole grain or good carbohydrate accompaniment.”

Noting that consistency is the key to success, Mr. Bruno learned two important lessons during his 15 years in the restaurant industry: no customer should want or need for anything while in your restaurant and all food should be perfectly fresh, prepared and served.

“Each and every person should expect the utmost in service and dining pleasure,” he said. “I believe and strive for perfection for each and every customer and I train my staff to do the same. We shouldn’t miss a beat and, if by chance we do, then we do whatever it takes to correct it and please the customer.”

To keep the restaurant current, Bullfish will change its menu frequently and offers daily specials to keep up with available stocks of fresh seafood. Mr. Bruno created the menu in collaboration with his chef. “A menu and a restaurant stay current when the chef and the owner work together to create food and an atmosphere that is second to none,” Mr. Bruno said. “You do that by paying attention to what the customer’s desire and providing them with what they want and what they didn’t know they would want. In other words, surprise and delight them.”
