Firefighting News reported that a two-alarm fire that broke out April 8 in the kitchen of Naked Fish Japanese Cuisine restaurant destroyed the business.
"They got lucky that the fire didn't cause damage elsewhere, because it was located in a strip mall," says Massoud Farazandeh, CEO of APS-Hoods, a Fort Collins hood installation company (www.aps-hoods.com/services/hood-duct-fan-hvac-installatio...). "This could have been more costly."
The restaurant didn't have a sprinkler or smoke detection supervising system installed; Hayward Fire Capt. Thor Poulsen was quoted as saying in the article.
The cause of the fire was not given, and Farazandeh says that although he cannot speculate on the fire's cause, it is an opportunity to remind restaurant owners that regular cleaning of commercial kitchen hoods (www.aps-hoods.com/services/index.php), ducts and fans can help prevent restaurant fires.
These systems collect grease in the hoods, ductwork and fans during the cooking process, and grease buildup is fuel in the event of a fire.

The Naked Fish fire also serves as a somber reminder that even if an establishment isn't required by law to have a fire suppression system, they remain a good idea, says the Fort Collins hood cleaning specialist.
"It's better to install a suppression system than to have to hire a Fort Collins commercial hood installation and fire restoration company to repair the damage caused by fire," he says.
