And for new executive Chef King Heun Wai of Casino Caribbean (casino-caribbean.net), that is exactly the case. After over thirty years of culinary experience, the Hong Kong native now calls Casino Caribbean ‘Home’. Currently featuring a menu with almost 100 different items, authentic Asian cuisine is required to keep customers coming in the door.

“With Asian cuisine being so important to our business, it was a no-brainer to seek out such a highly touted Chef” says John Mcnutt, General Manager of Kirkland’s Casino Caribbean. “Chef King brings with him a wealth of cooking experience and some great tasting food!”.
Most recently as the head chef at Seattle’s ‘House of Hong’ restaurant, Chef King has created a buzz around Chinatown. He has garnered the attention of local and national awards, as well as being recognized as one of the top 100 Chinese Chefs in America several years in a row. He routinely graces King 5’s Best of Western Washington top 5 Chinese restaurants, including 2008, 2009, and 2010.

When asked the secret to his success, Chef King is quick to point to his ingredients. “Asian food is about being authentic with whatever you are cooking. Whether it is Mongolian Chicken or Pan Fried Squid, I try to let the ingredients do the work. If you are using quality ingredients, your customers will know”.
Nestled in Kirkland’s Kingsgate neighborhood, the giant neon sign is hard to miss. A staple in the community since 2005, Casino Caribbean opened with a much smaller variety of dining options. “We started with a small number of common Chinese dishes” says Mcnutt. “With the customer base we have today, expanding our menu and bringing in Chef King was a necessity”.

Most recently, Casino Caribbean (www.casino-caribbean.net) has added a variety of Thai dishes to tantalize customer taste buds. The menu features what you may expect to find, along with a colorful myriad of interesting choices. Whether customers are in the mood for Braised Tilapia or General Tsao’s Chicken, Casino Caribbean knows offering a variety of dishes is what keeps them above their competition.
